Equipped with high-performance machinery, the company has maintained the traditional mustard-making expertise: grinding the seeds with a stone mill, which preserves all the flavor of the paste. Particular attention is paid to environmental preservation and protection: sorting and recycling waste, treating effluents, and more. Marc Désarménien, Edmond Fallot's grandson, currently manages the company. Around twenty employees contribute to the quality of production. Over the years, the company has expanded its product range to include aromatic mustards, vinegars, preserves, and condiments, using a manufacturing process that adheres to the quality standards to which La Moutarderie Fallot is committed. To share its traditional expertise with the public, La Moutarderie Fallot has opened a Museum Space featuring two visitor routes. Two boutique workshops (Beaune and Dijon) have opened with a tasting area entirely dedicated to 'Enjoy Fallot!' mustard.
